SNACK OF THE WEEK: Carrot Snack for Little Bunnies

As you prepare your Easter celebration full of ham, hot-crossed buns, chocolate bunnies and other delicious goodies, plan on adding in this festive, easy and healthy appetizer. It is both nutritious and fun, but the best part is the simplicity. It is a no-cook recipe with simple preparation. 

You will need:
  • Carrots, peeled and sliced into circles
  • Broccoli, trimmed to florets
  • Hummus, make your own or purchase (other dips will work well, serve it with anything you or your kids enjoy for dipping veggies)
Preparation:
  1. A simple tray works best, as in the picture, but any flat surface will work. A clean cutting board might offer a good alternative for presentation as well. 
  2. Arrange sliced carrots on the tray in a triangular shape. It doesn’t have to have a pointy tip - a rounder tip looks more realistic. 
  3. Arrange prepared broccoli at the top of your carrots to look like the carrot greens. The “greens” may look shorter than actual carrot greens, but you can arrange them to be similar.
  4. Serve your no-cook and fun-looking appetizer along with some hummus or your favorite vegetable dip, and enjoy.
