Ingredients:
1-1/2 lb small carrots
1 tsp chives, diced (I added a little bit more because I LOVE chives)
1/4 tsp garlic powder
1 tbsp dijon mustard
2 tbsp maple syrup
1 tbsp mustard, stone ground
1/2 tsp salt
Prep time: 5 min
Items needed: small mixing bowl, baking dish, tablespoon, teaspoon
Instructions:
1. Preheat oven to 425 degrees.
2. In a small bowl, mix the maple syrup, stone-ground mustard, dijon mustard, garlic powder and salt.
3. Add carrots to baking dish, pour half of the mustard mixture onto the carrots and toss to evenly coat the carrots.
4. Bake for 20-30 min or until the carrots are tender.
5. Remove carrots from oven and top with remaining mixture.
6. Sprinkle chives over the top and serve.
I also made buckwheat, which went perfectly with the carrots.
