Is your electric pressure cooker still in the box from Christmas? Not sure where to start? You’re in luck because I have a TON of go-to quick fixes using my Quick Cooker.
I know opinions vary on which pressure cooker is top dog, but I personally love my Quick Cooker over others that I have tried. (Hint-it’s about the safety features for me!) The good thing about this recipe and the majority of the other recipes out there is that it can be adapted for any electric pressure cooker that you have. If the recommended setting is not on your cooker, find the one that is closest to it, and adjust from there.
One recipe that my whole crew loves is Quick Cooker Jambalaya. It’s not only quick, but it’s a one-pot meal. And I know nobody is going to argue about fewer dishes!
Here’s what you need-
- 4 pre-cooked sausage links
- 1 lb. boneless, skinless chicken breasts
- 1 small onion
- 1 red bell pepper
- 3 celery stalks
- 3 garlic cloves
- 1 tbsp Cajun seasoning
- 1 tbsp canola oil
- 2 cups low-sodium chicken broth
- 1 can(14.5oz) fire-roasted diced tomatoes
- 1½ cups long-grain white rice
- 1 tsp hot sauce (optional)
- Fresh parsley leaves (optional)
Chop the veggies and protein, sauté the sausage and veggies for a bit on the sauté setting, and then you’re ready to throw it ALL in the inner pot. I left out the hot sauce...because kids...and you could totally substitute diced tomatoes for the fire-roasted if you needed even less kick. The flavors make me think that someone from LA created the recipe instead of those imposter Cajun recipes that we’ve all tried before. Ha!
