If you've ever seen someone excitedly setting an alarm for Sunday afternoon to order bread and donuts, chances are they've discovered Scratch Bakehouse.
Located in West Monroe, Scratch Bakehouse is a home-based cottage bakery specializing in handcrafted sourdough breads, focaccia, pizza dough, and its wildly popular Sourdough Italian Bomboloni—light, fluffy, filled donuts that often sell out quickly. What makes this bakery different is its commitment to traditional sourdough baking, using a slow fermentation process that can take several days from start to finish. Scratch Bakehouse is so popular that they are often sold out within minutes of the Sunday GO LIVE PRE-ORDER event. (Every Sunday at 4:00 pm)

Owner Christina Poole's sourdough journey began as a personal wellness quest. Looking for healthier food options, she discovered the benefits of naturally fermented sourdough and began baking for her family. What started in her kitchen quickly grew into a beloved local business with a loyal following throughout Northeast Louisiana.

Every loaf is made using traditional sourdough methods, creating breads that are known for their flavor, texture, and digestibility. Customers can choose from artisan loaves, sandwich loaves, focaccia, cheddar jalapeño focaccia, pizza dough, and seasonal specialty items.
One of the bakery's biggest attractions is its Sourdough Italian Bomboloni. These artisan donuts are offered on select Fridays and feature rotating seasonal flavors. The donuts have developed a near cult following, often selling out shortly after orders open.

Orders for Scratch BAKEHOUSE can only be placed on Sundays at 4 pm. The baked goods can be picked up Tuesday through Thursday, but the incredible donuts, known as Italian Bombolonis, are only available for pickup on Fridays. This limited availability adds to the excitement and anticipation of trying these delectable treats.

Planning is important because Scratch Bakehouse operates entirely through pre-orders.

What is Sourdough?
Sourdough goes back to about 1500 BC. It's the oldest form of leavened bread. It will be different from all your store-bought, commercially-made bread (yes, even those labeled "sourdough"), because it's naturally, slowly fermented.
This slow process allows the yeast to break down carbohydrates and gluten found in flour. This creates low levels of gluten, decreased by up to 97%! - and easier digestion (hello gut health!). Commercial bread uses additives, chemicals, and short proofing times, which contribute to the litany of health issues surrounding wheat intolerance.
The lactic acid found in sourdough also helps decrease the levels of phytic acid in bread (phytic acid inhibits the absorption of nutrients). So, our bodies can absorb the actual good vitamins and minerals found in wheat!
