Simple Watermelon Cake, Perfect Birthday Treat!

A wonderful cake alternative for people that need gluten-free options or have allergies.

This Watermelon cake is a perfect summer treat, and, in our case, it made the perfect birthday cake for our granddaughter, Eila. Eila loves fruit and also happens to be allergic to eggs, so Mom and Dad got creative!

Watermelons are in abundance right now and can be found at all of our local Farmer's Markets such as Monroe Farmers Market, Farmer's Market on Seventh Square, and Ruston Farmer's Market




Here are the steps to carve a watermelon into the shape of a cake and then decorate it with other fruit:

1. Start by choosing a round and firm watermelon. Wash it thoroughly and pat it dry with a clean towel.

2. Place the watermelon on a cutting board and slice off about 1 inch from the bottom to create a stable base. This will ensure the cake won't topple over.

3. Use a sharp knife to cut off the top portion of the watermelon.

5. Take one of the watermelon halves and trim the edges to create a cake-like shape. Round the corners slightly to mimic the shape of a traditional cake.

6. Repeat the same process with the other watermelon half to create another layer. You should now have two watermelon layers resembling cake layers.

7. Place the first watermelon layer on a serving platter or cake stand. If needed, you can secure it with toothpicks or skewers to prevent it from sliding.

8. Use an assortment of fresh fruits, such as berries, kiwi, pineapple, grapes, etc. Be creative and use a variety of colors and textures. We used toothpicks to hold our fruit decorations in place.  

10. Decorate the top layer of the watermelon cake with more fresh fruit. You can arrange the fruits in a pattern, create a border, or simply scatter them on top.

11. Optional: You can add a dollop of whipped cream or Greek yogurt on top of the watermelon cake as a frosting substitute.

12. Optional: Garnish the cake with mint leaves, edible flowers, or shredded coconut for added visual appeal.

13. Refrigerate the watermelon cake for at least an hour before serving to allow the flavors to meld together and make it easier to slice.

14. When ready to serve, carefully cut the watermelon cake into wedges, just like you would with a regular cake.
